The reference resistor is a 430 ohm SMD with 5% tolerance. This mean, the temperature output value can be 5% + other tolerences. Why use the precise MAX31865 chip with this crappy reference resistor? If you replace the reference resistor or find out its real value and put it in your code, it may work.
